This One
This one is different, it's butterless and flourless.
My only desire was to bake. Roberto wanted chocolate cake (I wanted chocolate cake too). I also wanted peanut butter cookies. But the pickle was this, we only had 1 1/2 sticks unsalted butter and we were snowed in.
Long story short, I made the cake, the mother of all moist chocolate cakes (without butter). That recipe will come, but not today.
I also made the peanut butter cookies (without butter or flour).
"These are flourless?" He asked.
"Yep." I replied.
This cookie is for all who don't have dessert to take with their evening espresso tonight. For those who will ponder and pour over recipes, the day over, only to come up empty. Those who (love) peanut butter and baking using great economy in product and time.
"I'll never make another recipe again. These are perfect." I said.
It is my wish that you make these (you'll see that I left out the chocolate chips suggested, though) tonight before you wash the salad greens or put the pot of water on to boil.

I will be making these as I love peanut butter and my sister cannot tolerate wheat so I am always on the look out for quick and easy flourless recipes for when she comes over. I am looking forward to the chocolate cake post.

ReplyDeleteWendi - There were 27 cookies. I took half to work. The other half lasted a week between the two of us. They would have been gone sooner, but I exercised moderation.

I adore peanut butter cookies and these look so EASY, how could I not make them? I have to admit that I will probably add the chocolate chips, since I'm perhaps even more addicted to chocolate than to peanut butter. Are these very delicate? (being flourless and butterless I'd imagine they might be) If not I'm thinking they might make a good care package.

These look yummy...I think my favourite part about making peanut butter cookies is when you get to smash them down and make a design with a fork...sometimes I use a potato masher. It's fun!

ReplyDeleteI am curious about your chocolate cake. It was my neighbors birthday a few weeks ago, and I asked her husband what her favorite cake was. He almost told me what HIS favorite cake was - a yellow cake with buttercream.
But he was a nice hubby and said "chocolate cake with chocolate frosting." Do you have Portillo's by you? Maybe its a midwest thing - anyway, they have THE BEST chocolate cake, and my husband said mine was a very close second.
My secret ingredient? Mayonnaise! I added a cup to the batter and it was the moist cake I've ever made.
