A Lentil Salad

I will be of few words today.

Arugula, baby spinach, radicchio (washed and spun dry). Lentils (cooked simply in salted chicken broth). Grape tomatoes (imported from Canada—these were summer-sweet—washed/dried and halved). Parmesan and pecorino (grated and mixed—clever). Extra virgin olive oil and red wine vinegar (lots). Tossed and eaten along with a thick slice of toasted seven grain.

And then I had another piece of seven grain (not toasted) with peanut butter. And I'm still hungry. Oh, hell.

  10. I love lentils. Never tried them in a salad though. The grated parmesan/pecorino on top is tantalizing! Like the look of the bread too.

  11. Such beautiful photos of an incredibly colorful salad. I love lentils with radicchio - a great combo. As for still hungry.... well, sadly, if I were you I'd probably have done way worse than some peanut butter. More like a cupcake or two!

    I have rediscovered lentil salad recently, and sherry vinegar to go with it.
