On our fourth day in Rome a dear friend gave me a quick lesson in making pasta.
I watched in awe as she, with one hand, combined eggs with flour.

300 grams flour (00)
I was then given the task of kneading the dough (8 minutes). 8 minutes doesn't seem very long when people are rustling about, straining and stirring, boiling and salting.

Deletesimple formulas are the secret of good cooks. Are you familiar with Ruhlman's book "Ratio"? I love the concept. Also, 8 minutes are a great amount of time for some good thinking (almost a meditation practice) :)
