Honest and humble

On this day I tucked into a slow scramble of eggs. A meal for one made with honest and humble ingredients. Two eggs. Olive oil. Salt and pepper. Parsley.

If you have eggs and a warm pan you have a meal. A fat of some kind, butter or olive oil (I tend towards olive oil). And, salt. I could forgo the pepper but I often do not. The parsley is often a flourish at the end if there is any laying about. There usually is some laying about.

If not a slow scramble then a poach, fry or soft—hard—boil.

Alone on a plate. Heaped onto a pile of lentils. Floating in a sauce of red. Alone with toast.

Honest and humble.

  1. oh yes! I've been inhaling lentils and poached eggs and sometimes even - more often than not - roasted veggies. a key meal in my weekly meal plans. nutritious, simple, delicious and oh so healthy. I love it !

  2. You're so right - an egg makes a meal. And plonk a fried egg on a plate of leftovers, and you've got a whole new dish.
    I like mine best scrambled with a sprinkle of pepper. Soft egg, coarse pepper.
