On this day I tucked into a slow scramble of eggs. A meal for one made with honest and humble ingredients. Two eggs. Olive oil. Salt and pepper. Parsley. If you have eggs and a warm pan you have a meal. A fat of some kind, butter or olive oil (I tend towards olive oil). And, salt. I could forgo the pepper but I often do not. The parsley is often a flourish at the end if there is any laying about. There usually is some laying about. If not a slow scramble then a poach, fry or soft—hard—boil. Alone on a plate. Heaped onto a pile of lentils. Floating in a sauce of red. Alone with toast. Honest and humble.
