Nut Bread

Nut Bread

Deep breath.

Here I am, again. Avoiding work.

Nut Bread (Joy of Cooking)

Combine: 2 cups all-purpose flour, 1/2 cup sugar or packed brown sugar (I used dark brown), 2 teaspoons baking powder, and 1 teaspoon salt.

Beat in: 1 large egg, 1 cup milk, 2 tablespoons melted butter (I used olive oil), and (1/2 teaspoon vanilla)—why was vanilla parenthetical text?

I was out of vanilla, anyway.

Fold in: 1 1/2 cups chopped walnuts or pecans (I used both).

Bake at 350 degrees in a loaf pan for about 40 minutes.

"Do you want to try some of the nut bread before we watch Voyager?" I asked.

I had it all planned out—in my head. A slice of nut bread—because it was perfectly cooled and we hadn't so much as sliced a peek or nibble. Then we'd close the lights in the kitchen and sit down to two episodes of Voyager.

And so it went.

It needs the parenthetical text, the aforementioned vanilla.

  1. This is more fun than food and wine pairing. Nut bread before Voyager. I hope it was tasty. Last night we had chili with The Adjustment Bureau.
